Vegan Poke Bowl With (Or Without) Tofu

Our vegan version offers a twist on the Hawaiian dish which is traditionally made with raw fish, rice, and vegetables. It’s perfect for a light lunch or dinner, and the best thing about is that it can be easily customized to suit your own taste.

Easy to make

It’s ready in just 20 mins, and deceptively easy to make too,  if you can cook rice then you’re 80% of the way there to creating your poke bowl, and even if you can’t you can always use microwavable rice (we won’t tell anyone). 

Customizable 

The best thing about this dish is how customizable it is, we’ve added all the things we love (hello wakame seaweed), but you don’t have to exactly follow this recipe, you can use it as inspiration and add in things you do like, or remove the things you’re not so keen on.

Ingredients

Rice

Rice is the key ingredient of the poke bowl, we’re using jasmine rice (as it’s my personal favorite) and allowing half a cup per person, but you can choose your preferred grain of rice and quantity.

Tofu

We’re using tofu to add a bit of protein to the dish, but you can make a poke bowl with or without tofu, we’ve marinated it in teriyaki sauce beforehand to give it a sweet and tangy flavor. 

Avocado

Avocado is high in healthy fats, fiber and potassium, and we’re using one avocado to make a meal for two.

Wakame seaweed

This is my favourite ingredient as I love how refreshing it is and its subtly sweet flavor, plus it’s packed full of healthy vitamins and minerals. We picked it from the frozen section of an Asian store and let it defrost before using it.
